Ingredients:
Hariyali Paste:
- ΒΌΒ cup fresh coriander leaves
- ΒΌΒ cup water
- Fresh mint leaves
- 1 tsp whole coriander seeds
- 3-4 Jyoti Foods choti elaichi/green cardamom pods
- 1 inch ginger (peeled and chopped)
- 2-3 green chilies
Pulao:
- 1 cup Basmati rice (rinsed and soaked for 20 minutes)
- 2 tbsp ghee/vegetable oil
- 1 bay leaf
- 1 tsp Jyoti Foods jeera/cumin whole
- 1 medium sized onion (thinly sliced)
- 1 tsp Jyoti Foods turmeric/haldi powder
- 1 tsp Jyoti Foods red chili/lal mirch powder
- 1 tsp Jyoti Foods coriander/dhaniya powder
- Β½ tsp Jyoti Foods garam masala
- 150 gms paneer (cubed and pan-fried)
- 1 cup chopped vegetables (carrots, peas, green beans - optional)
- 1 Β½ cups water
- Salt to taste
- Fresh cilantro/mint leaves and Jyoti Foods Whole Cashews/Kaaju, for garnish
Instructions:
- Combine coriander leaves, mint leaves, sliced ginger, green chilies and water in a blender. Grind to a smooth paste.
- Heat ghee/oil in a pressure cooker/pot.
- Add cumin seeds and let it splutter.
- Add bay leaf and sliced onions. Fry until golden brown.
- Add turmeric powder, red chilli powder, coriander powder and garam masala. SautΓ© for a minute.
- Add the prepared hariyali paste and cook for 2-3 minutes, until the raw smell disappears.
- Add chopped vegetables and cook for another minute. (Optional)
- Add paneer cubes and stir/toss gently.
- Add the soaked basmati rice, water and salt to the presuure cooker. Cook for 2 whistles on medium heat.
- Garnish with fresh cilantro/mint leaves and whole cashews.Β
- Serve hot with raita or your favorite chutney.
Tips:
- For a richer flavor, use homemade paneer and adjust the amount of green chilies, based on your spice preference.
- You can add other vegetables like cauliflower or bell peppers to the pulao.Β
