Hariyali Paneer Pulao

Ingredients:

Hariyali Paste:

  • ΒΌΒ  cup fresh coriander leaves
  • ΒΌΒ  cup water
  • Fresh mint leaves
  • 1 tsp whole coriander seeds
  • 3-4 Jyoti Foods choti elaichi/green cardamom pods
  • 1 inch ginger (peeled and chopped)
  • 2-3 green chilies

Pulao:

Instructions:

  1. Combine coriander leaves, mint leaves, sliced ginger, green chilies and water in a blender. Grind to a smooth paste.
  2. Heat ghee/oil in a pressure cooker/pot.
  3. Add cumin seeds and let it splutter.
  4. Add bay leaf and sliced onions. Fry until golden brown.
  5. Add turmeric powder, red chilli powder, coriander powder and garam masala. SautΓ© for a minute.
  6. Add the prepared hariyali paste and cook for 2-3 minutes, until the raw smell disappears.
  7. Add chopped vegetables and cook for another minute. (Optional)
  8. Add paneer cubes and stir/toss gently.
  9. Add the soaked basmati rice, water and salt to the presuure cooker. Cook for 2 whistles on medium heat.
  10. Garnish with fresh cilantro/mint leaves and whole cashews.Β 
  11. Serve hot with raita or your favorite chutney.

Tips:

  • For a richer flavor, use homemade paneer and adjust the amount of green chilies, based on your spice preference.
  • You can add other vegetables like cauliflower or bell peppers to the pulao.Β
