  • Dry roast mustard seeds, cumin seeds, fenugreek seeds, fennel seeds, red chilies, cinnamon stick, cloves, and cardamom pod in a pan over low heat until fragrant.
  • Grind the roasted spices to a coarse powder.

Making the Dahi Achari Paneer:

  • Heat oil in a pan or pot over medium heat. Add bay leaf and cumin seeds. Let the cumin seeds splutter.
  • Add sliced onions and fry until golden brown.
  • Add ginger-garlic paste and cook for a minute until the raw smell disappears.
  • Add turmeric powder, red chili powder, and achari masala. SautΓ© for another minute.
  • Add whisked yogurt and bring to a simmer. Do not boil.
  • Gently add the pan-fried paneer cubes.
  • Season with salt to taste.
  • Simmer for 2-3 minutes, allowing the flavors to meld.
  • Garnish with chopped fresh coriander leaves.
  • Serve hot with rice or naan.
