Ingredients:
For the Pesto:
- 2 cups fresh basil leaves
- ½ cup California Almonds/Badaam (Toasted)
- ½ cup Whole Cashews/Kaaju (Toasted)
- 2 cloves garlic
- ½ cup grated parmesan cheese
- ½ cup extra virgin olive oil
- Salt and Black Pepper Whole/Kaali Mirch (Freshly Grounded)
For the Pasta:
- Spaghetti Pasta (500 gm approx.)
- Salt
- Fresh cherry tomatoes (optional), for garnish
- Chopped fresh basil leaves (optional), for garnish
Instructions:
Make the Pesto:
- Combine basil leaves, toasted almonds, toasted cashews, garlic, parmesan cheese and olive oil in a food processor and form a coarse paste.Â
- Season with salt and freshly ground black pepper to taste. Set aside.
- Bring a large pot of salted water to a boil.
- Add the spaghetti and cook according to package instructions.
- Reserve about ½ cup of pasta water before draining.
Assembling the Dish:
- In a large bowl, toss the cooked spaghetti with the prepared pesto sauce.
- Add some reserved pasta water, a tablespoon at a time, until the desired consistency is reached (a light coating, not soupy).
- Garnish with fresh cherry tomatoes and chopped basil leaves (optional).
Serve hot and enjoy!
Tips:
- For a richer pesto, add a tablespoon of grated Pecorino Romano cheese along with the Parmesan.
- If you do not have a food processor, you can use pestle and mortar instead.Â
