Creamy Pesto Spaghetti

Ingredients:

For the Pesto:

For the Pasta:

  • Spaghetti Pasta (500 gm approx.)
  • Salt
  • Fresh cherry tomatoes (optional), for garnish
  • Chopped fresh basil leaves (optional), for garnish

Instructions:

Make the Pesto:

  • Combine basil leaves, toasted almonds, toasted cashews, garlic, parmesan cheese and olive oil in a food processor and form a coarse paste.Β 
  • Season with salt and freshly ground black pepper to taste. Set aside.
Cook the Spaghetti:
  • Bring a large pot of salted water to a boil.
  • Add the spaghetti and cook according to package instructions.
  • Reserve about Β½ cup of pasta water before draining.

Assembling the Dish:

  • In a large bowl, toss the cooked spaghetti with the prepared pesto sauce.
  • Add some reserved pasta water, a tablespoon at a time, until the desired consistency is reached (a light coating, not soupy).
  • Garnish with fresh cherry tomatoes and chopped basil leaves (optional).

Serve hot and enjoy!

Tips:

  • For a richer pesto, add a tablespoon of grated Pecorino Romano cheese along with the Parmesan.
  • If you do not have a food processor, you can use pestle and mortar instead.Β
