Craving a protein-packed, flavorful salad that's easy to make? Look no further than our delightful Chickpea Salad! This vibrant dish combines protein-rich chickpeas with fresh vegetables and a light, zesty dressing.Β
Ingredients:
For the Salad:
- 2 cups cooked chickpeas (drained and rinsed)
- 1 cucumber, diced
- 1 tomato, diced
- 1 red bell pepper, diced
- Β½ red onion, thinly sliced
- ΒΌ cup chopped fresh parsley
- ΒΌ cup crumbled feta cheese (optional)
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp dijon mustard
- 1 clove garlic, minced (optional)
- Β½ tsp dried oregano (optional)
- Salt and Jyoti Foods Black Pepper / Kaali Mirch Powder to taste
- Pinch of Jyoti Foods Roasted Cumin / Bhuna Jeera Powder
- In a large bowl, combine chickpeas, diced cucumber, tomato, bell pepper, red onion, and parsley.
- In a separate bowl, whisk together olive oil, lemon juice, dijon mustard, garlic (if using), oregano (if using), salt, and pepper. Add a pinch ofΒ Jyoti Foods Roasted Cumin / Bhuna Jeera Powder for an extra kick.
- Pour the dressing over the chickpea and vegetable mixture and toss gently to coat.
