Ingredients:

For the Salad:

  • 2 cups cooked chickpeas (drained and rinsed)
  • 1 cucumber, diced
  • 1 tomato, diced
  • 1 red bell pepper, diced
  • Β½ red onion, thinly sliced
  • ΒΌ cup chopped fresh parsley
  • ΒΌ cup crumbled feta cheese (optional)
For the Dressing:
Instructions:
  • In a large bowl, combine chickpeas, diced cucumber, tomato, bell pepper, red onion, and parsley.
  • In a separate bowl, whisk together olive oil, lemon juice, dijon mustard, garlic (if using), oregano (if using), salt, and pepper. Add a pinch ofΒ Jyoti Foods Roasted Cumin / Bhuna Jeera Powder for an extra kick.
  • Pour the dressing over the chickpea and vegetable mixture and toss gently to coat.
  • Crumble feta cheese over the salad for an added layer of flavor and creaminess.Β (Optional)
